Picture this,
A pile of salted tortilla chips, topped with melted mozzarella and cheddar. YUM!

And Fresh Salsa:

I use this salsa for Nachos... and if I'm using it to bake enchiladas,
I used Tinned Tomatoes instead of fresh ones, it gives a better sauce.

Anyway, put the following in a bowl:
-Punnet of Cherry Tomatoes, roughly chopped (I like to keep
the seeds and liquid, but deseed if preferred!)
-1 Red Onion, diced
-1 Green Chilli, finely diced
-Juice of 1 Lemon/Lime
-Handful of Fresh Coriander, torn up

Season, and spoon over Nachos (along with some sour cream!).

I am craving this dish mais malheuresement, being vegan=no dairy.
